Spicy Vindaloo Wings w/ Yogurt Sauce

 

Super Bowl Sunday is right around the corner. Although I am a basketball / soccer type of gal, I am down to eat any game food. Literally ANY! Chicken wings are definitely one of my favorite things to eat and it’s such a perfect snack while watching some epic touchdowns. Instead of making buffalo wings with ranch or blue cheese dipping sauce, I decided to make them with Indian flavors. If you have had lamb vindaloo, you know it is a delicious sauce with some spicy kicks. Now, don’t be scared if you can’t handle spicy, that is exactly what this creamy yogurt sauce is for. The yogurt sauce is inspired by Raita which is a delicious side dish /condiment used to bring out more flavors and cool the palate when eating spicy Indian dishes. The wing sauce is inspired by a friend’s recipe (shout out to Arul!) and the baking method of crispy wings is from RecipeTin Eats.

Ingredients:

Crispy Baked Wing

2lb chicken wingettes & drumettes
2 1/2 tsp baking powder
3/4 tsp salt

Chicken Wing Sauce

6 garlic cloves
1 tbsp minced ginger
2 tbsp sesame oil
2 tbsp vindaloo sauce
1 1/2 tbsp soy sauce

Yogurt Dipping Sauce

1/2 cup plain yogurt
1 tbsp lemon juice
2 tsp green onions
1/4 tsp ground cumin
1/4 tsp ground coriander
pinch of salt

Direction:

Wings:

Pat wings dry with paper towel. Preheat oven to 250°F /120°C
Put one oven shelf in lower quarter and one in top quarter. Line a baking tray with foil and spray the rack on the tray with oil. In a large bowl, mix wings with baking power and salt until they are coated evenly. Place wings on the rack. No leaving space needed, they will shrink as they cook. Place the tray in the lower shelf and bake for 30 minutes. Then turn up the oven to 425°F/220°C, move the tray to the top shelf and bake for another 40 minutes or until wings are golden brown and the skin is crispy. Toss with sauce and serve immediately. They could be served just as is (quite spicy) or with yogurt dipping sauce!

Wing Sauce:

Mince garlic cloves and ginger. Sautée minced garlic and ginger in sesame oil until fragrant
Mix with vindaloo sauce and soy sauce

Yogurt Dipping Sauce

Mix all ingredients together, chill in the fridge covered until ready to serve
